  • What is Sous Vide?
Sous Vide is a method of precision cooking in which food is sealed in a vacuum-sealed bag and cooked in a precisely controlled water bath at a low temperature usually between 55c and 70c for an extended period of time—often 1 to 7 hours. The result is incredibly tender, delicious food with consistent results every time.
  • Does Sous Vide Retain More Nutrients?
Yes, Sous Vide retains more nutrients than other traditional cooking methods. This is because the process's low temperatures prevent damage to heat-sensitive compounds. Nutrients that are heat sensitive include: - Vitamin A - Vitamin C - Vitamin E - Thiamine (vitamin B1) - Folate (vitamin B9) - Pyridoxine (Vitamin B6 ) - Cobalamin (Vitamin B12) - Choline - Polyphenols (Such as those in Broccoli)
  • Are There Any Risks to Using Sous Vide?
Yes, there are potential risks associated with using Sous Vide. It is important to maintain the proper temperature and make sure that your food is completely sealed in its bag before placing it in the water bath. The key to Sous Vide safety is a calculation of temperature and time, bacteria can be killed at lower temperatures if held there for longer amounts of time. It's important to include the time it takes for the food to reach the required temperature when calculating how long a food should be cooked in the water bath. Sources like the NSW Food Authority, USDA and FDA all have good documents detailing Sous Vide safety.
  • How do I store the food?
You can store our unopened vacuum bags in a fridge under 4c for up to 5 days. Once opened store in an air tight container and use within 2 days. When your order arrives we recommend keeping enough food for the next 4 days in the fridge and freezing the rest. Remove the next days food from the freezer and thaw in the fridge for 24 hours.
  • Why is there liquid in the bag? Should I feed the liquid to my dog?
Yes it's important to feed the liquid to your dog. We deliver the food to you in the same bag it's cooked in, this is to reduce the risk of bacterial contamination after the cooking process, and to reduce waste. Because of this the liquid that cooks out of the food is retained in the bag. The liquid is the natural juices that come out of the food as it cooks. This liquid contains many of water-soluble vitamins, including B Vitamins, so it's very important to feed it to your dog. We've added Gelatine to the recipe both for its collagen and to help this liquid set up. However, freezing separates the gelatine from the water and it will no longer gel once thawed. The liquid is included in the weight caloric calculations when determining the caloric and nutrient density of the food. That means there's no need to worry about the water weight affecting whether or not your dog is getting enough to eat.
  • How is your food packaged?
Our food is packaged into vacuum-sealed portions. During the checkout process, we ask about your dog's weight and activity level, this is to work out their caloric requirements. We do this so that we can accurately weigh out vacuum-sealed bags that last for two days worth of meals. Once the vacuum-sealed bag has been opened store the remaining food in an air-tight container.
